Qawzah Cooperative
South Lebanon
Zaatar Qawzah Baladi

Located in the village of Qawzah, near by the southern border of Lebanon, this agricultural cooperative mostly produces a premium type of thyme « the Terroirs du Liban zaatar», and is taking up the production of saffron.

Fair Trade Lebanon supports this cooperative by marketing its products; in fact, this « Terroirs du Liban » zaatar is solely produced with the thyme flower (while commercial zaatar is mixed altogether with the leaves and branches).

This is why this zaatar figures at the table of Olivier Roellinger, the renowned French chef, 3-times holder of Michelin star and recognized for mixing traditional cuisine with worldwide spices.
